How to make yogurt parfait?

  • Make a fruit compote: add 2 cups of blueberries, sugar, and water to a simmer in a small saucepan over medium heat.
  • Cook the stirring frequently until the berries have burst and the compote has thickened, about 4 – 9 minutes. Important – There should be 1 cup of blueberry compote.
  • Chill the compote through: Pour the mixture into a bowl and then place it in the refrigerator until it is cooled. Wait to assemble parfaits until you are almost ready to serve them so the granola stays crisp.
  • Layer the yogurt parfaits: Among 12 oz. cups layer 1/3 cup yogurt, 2 Tbsp blueberry compote, 2 Tbsp granola, and 1 Tbsp blueberries.
  • Repeat the layering process once more. Serve
